Poke holes in potato with a fork and cook in the microwave for 4 minutes until the potato is partially soft. Chop all vegetables and steak into 1-inch pieces. Briefly soak skewers in water. This prevents them from burning on the grill. Then, thread veggies, potatoes and steak onto skewers and drizzle kebabs with olive oil.
Grill kebabs on medium-high for about 5 minutes per side until steak is cooked to your liking and vegetables are softened and have some grill marks on them.
Meanwhile, blend together all ingredients for the pesto until it is very smooth.
Top cooked kebabs with pesto sauce or dip it into pesto on the side.
