In 2014, the Romine brothers, Matt and Mike, had the vision to open a farm-to-table restaurant in Imlay City, Mich., the Mulefoot Gastropub, which was quickly rated a Top 100 Restaurant in the US, by OpenTable.com. Their quest for the finest and most unique local foods inspired them to found Farm Field Table, an artisan butcher shop in Ferndale, where heritage Mulefoot/Mangalitsa hogs from their father’s Michigan farm are small-batch processed into the finest sausage and bratwurst available. They also source heritage Tamworth/Hereford hogs from another local farm.
Both farms are non-GMO. The Mulefoot/Mangalista hogs are fed with scraps from the restaurant and other produce not suitable for sale. The Tamworth/Hereford hogs are finished on a hardwood lot. Both heritage mix breeds offer superior marbling to modern breeds used by industrial farms. The extra fat is perfect for the cured products and artisan sausage that Farm Field Table offers.
